Well you can probably see this already, but for those of you that find my blogs, and photography interesting and actually visit my page - I am in the process of making some changes.  Changes to the overall look, and my photo gallery design. I should have things back up to normal soon.  Did you know that I actually get about 3 - 400 visitors a month?  Wow huh

Crustless Pizza's, great for a diabetic meal

pizza1In my quest to find better food ideas, with great tast that I love - but being lower in carbs to work better with my diabetic diet, I returned to a classic yesterday that we used to sell at my moms returaunt.  This idea came from a time when the Atkins diet was popular, so it was with very little carbs.  

The Crustless Pizza is just that, pizza witout the crust.  Taking a oven safe dish, like an individual corningwear dish and putting down pizza sauce at the bottom of the dish.  Now build it just like any other pizza - Cheese, pepperoni, canadian bacon, salami, mushrooms, onions, and then top with more cheese.  Put it in the oven for about 10 - 15 minutes at 450 - can come out when cheese starts to turn golden brown.  You can substitue anything, double up the layers to make it ore filling - Just dont add anything that would add up to more carbs.  

This is great tasting self made pizza that keeps the carbs down 

Trader Joes Pizza Crust Pizza

So I finally decided to try it - the Trader Joes Pizza Dough Crust and making my own Pizza.  Ive never really cooked with a pizza dough itself so I was a tad bit worried.  But het, pizza dough at less then $2 for the entire crust why not five it a try.  So I got the dough, the pizza sauce, cheese, mushrooms, peperoni and that was about it. I cut the dough ball in half though because I just didnt need that much pizza.  The result - was pretty awesome.  I cooked it at 470 degrees for 13 minutes.  The dough was all the way cooked through, fluffy and pretty much perfect.  Ill be doing this more often that is for sure.
